Our vanilla is grown right up the cacao trees in Shark's orchards! Each delicate flower has to be hand-pollinated daily over a period of aprx. 3 months. As the flowers drop, the vine produces a long bean which is harvested after 9-10 months. The beans are then gently fermented, dried and cured. We then infuse the beans into an alcohol base which then cures another 8-12 months.
